Medical ginger – Zingiber officinale.
It is one of the oldest tropical spices, typical especially for Asian cuisine. Ginger is highly valued for its light, spicy, fruity flavor and undeniable health benefits. It owes its sharp taste and smell to a large amount of essential oils: gingerol, zingerone and citral.
Young rhizomes are eaten raw or after heat treatment. They can also be candied. Older rhizomes are dried and used as a spice for gingerbread, biscuits, soups, and desserts. Ginger is also part of the popular spicy curry spice.
